A tale of 100 Salmon Dishes

This was my first book published back in 2000. The book idea came about while lying in my bathtub, believe it or not. I was trying to think of a special to create for the dinner service and I was randomly going through my brain, recalling what was available in the walk-in fridge. I knew I had a lot of salmon on hand, so that was the item to feature. The problem was how to prepare it. I started thinking, "Well, I could do it this way...and I could do it that way...or I could make it like this...or make it with that...or use that instead...or be creative and use that...or maybe try this..."and soon I realized that I knew a lot of ways to prepare salmon.

The internet was not around as it is today so knowing how to make over a hundred different salmon dishes was kind of a big deal. It didn't take long and suddenly I became famous in the East Kootenays of British Columbia, Canada for being the Chef with over 100 ways to cook salmon. My list was well over 200, which would mean nothing these days with a quick search on the web probably bringing up hundreds, if not thousands of salmon recipes. This book was a "best of" from my list at the time. Just a note, the cover was done by a well-known B.C. artist named Jim Poche. I loved going to coffee shops and seeing his chalk-artwork on the menu boards so I looked him up and asked if he could do a book cover similar to the chalk art. That is what he did and the rest is history!
